When you use your hand to touch something... a wall, for example- your nerves pick up on that. They send a signal to your brain, the texture of the wall, the feeling of how it also feels against your skin. When you smell something, it is your nose telling you what that scent is, and where it is coming from.
These are two senses I have never had before. Touch, previously to me, was conveyed only by pressure, and temperature. Scent was more of a diagnosis of the chemicals in the air, but never something that could tell me how sweet food smells.
