One theory is "Percy" as we know him is just infected with a Taraxa. He could have been a close personal associate of both doctors before that, and even if the Taraxa might have difficulty with basic human anatomy, they're still skilled infiltrators. It's unlikely Chapman and Wong would have noticed a difference and Percy's disappearance might lead anyone to assume any strange behavior might be sickness.
